Best Austrian Recipes: Kaiserschmarrn Desert (Chopped Pancakes with Sugar and Raisins)

Today I will present you a very traditional and tasty Austrian desert and that is the “Kaiserschmarrn” recipe. This is the perfect recipe to prepare for lunch or for dinner and to enjoy it with your family and/or your friends.
I will start with adding that it is quite difficult for me to translate the “Kaiserschmarrn” recipe, it is a kind of chopped pancake with powder sugar and raisins, but not really. This is definitely a traditional Austrian dessert and the name cannot be translated one-to-one. You will just have to trust me that it is delicious and try it yourself.
Ingredients (2 portions)
- 4 Eggs
- 125 grams Flour
- 125 ml MIlk
- 1 Pinch of Salt
- 1/2 Teaspoon Baking Powder
- 2 Spoons Brown Sugar
- 4 Spoons Butter
- Raisins
- Powder Sugar (for the topping)
Preparation
- Separate the eggs. Mix together the milk, the flour, the salt, the baking powder, the sugar and the egg yolks and let them rest for about 10 minutes.
- Beat the egg whites with a pinch of salt and add them to the egg-yolks-flour mixture. Add the raisins to the dough composition.
- Add 2 spoons of butter in a heated frying pan. Pour the whole dough composition to the frying pan and fry it at middle heat until the dough is golden on one side. Turn the dough composition on the other side in the frying pan. Add the other 2 spoons of butter in the pan and fry the dough until golden on the second side as well. Now use two forks to tear the dough composition in smaller pieces and fry them further in the pan.
- Serve the Kaiserschmarrn with powder sugar (and here in Austria with what we call Zwetschgenroster, i.e. Plum compote or with Apfelmouse, i.e. Apple sauce).
