Best Recipes: Blueberries Cake with Coconut Oil

Today I will divulge you a delicious recipe, that you can enjoy during the weekends, during special celebrations such as Eastern or Woman’s Day or during any family celebrations, and that is the “Blueberries Cake with Coconut Oil”. The secret ingredients are coconut oil (which is a great healthy replacement for butter), blueberries (which are engaging your metabolism in a positive manner), and of course a lot of love.
INGREDIENTS (12 Portions)
- 200 grams Flour
- 2 Teaspoons Baking Powder
- 3 Spoons Coconut Flakes
- Pinch of Salt
- 4 Eggs
- Lemon Juice (around 2-3 Teaspoons)
- 100 grams Coconut Oil
- 250 grams Cream Cheese (or in German Topfen)
- 80 grams Brown Sugar
- 500 grams Blueberries
- Lemon Zest (around 2-3 Teaspoons)
- 1 Vanilla Sugar Package
PREPARATION
- Mix all the dry ingredients in a bowl, i.e. mix the flour with the baking powder, the coconut flakes, and the pinch of salt.
- Wash the blueberries and let them dry so that they are not wet anymore. You can use here a kitchen towel to dry them if they are really wet.
- Separate the egg whites from the egg yolks. Beat the egg whites with the lemon juice with the mixer and leave them aside. Make sure to beat the egg whites really good, otherwise they will loose from their volume.
- Mix the egg yolks with the coconut oil, the cream cheese, the lemon zest and the brown sugar until you get an homogeneous paste. You can simply use here the spoon, no need for the mixer.
- Add the egg whites to the egg yolks composition and mix all the ingredients together. Then add gradually the dry ingredients until you get an homogeneous dough.
- Split your dough in approximately 3 pieces. In a baking tray add some oil and spread it homogeneously. Add one third of the dough to the tray and then one layer of blueberries. Add a second third of the dough to the tray and then again one layer of blueberries. Then add the last layer of dough and the very last blueberries fruits as topping to the cake. Use your hand to fix the blueberries into the dough at each layer.
- Preheat the oven at 180 grades Celsius. Bake the cake for 30 minutes, then add the package of vanilla sugar on the top of the cake and leave the cake bake for another 15 minutes. If in between the upper side of the cake gets too dark, just wrap it with some foil paper on top and leave it further baking in the oven.
- After the cake is baked, leave it cool down and then remove it from the tray on a wooden (or glass) plate.
- Enjoy the cake with coffee or tea!
